So I finally got my own PID and heater, to try out sous vide for real. I have a oven with a pid- thermostat, but it is impractical to reserve the oven for such use for long periods.
I bought this from Canada, Fresh meals solutions, and I’m happy as a chimp. Price, service and the quality of the goods, everything was top notch.
This is the PID, and the heater, the green thingy. I already had a air pump, so off to “biltema” to get a cooler. I modified the lid a bit to make sure that I could get the heater inside the cooler.
You can actually use any heat source that you like, but since this system will virtually self destruct if it runs out of water, I used some time to get a system with very little evaporation in the first place. The extra items cost me almost nothing, just a few dollars.
Now, on my test run I tried a bone in lamb leg. Not the easiest piece of meat, but my oh my what a result! It can be seen bagged on the top of the cooler. Not much to look at, I admit.
It was super tender, without being mushy. I’ve never eaten anything like it. After a quick sear on the gasser, here is what it looked like.
I’m sorry, no plated pictures. I had a lot of guests for Easter, and the leg was gone in a jiffy.
Now I’m just looking forward to search up all j.biesingers post, and try to copy his cooks.
