Thawed 8 breasts, w/ bone and skin.
Lazy; No brine, no marinade.
Air dried for an hour or so.
Sprinkled 4 w/ McCormick Roasted Garlic Chicken Seasoning, 4 w/ nothing at all.
Lit 1 full chimney of the New Kingsford, then poured a full chimney of the "orphans" from the last cook over that.
Wind break in place, weather sunny, 50°, winds 10 WNW.
3 medium chunks of hickory.
Skin side down for the first 20 mins.
WSM held 350° - 400° for the whole cook.
Pulled when 165° internal, finished directly over coals, on both sides, till skin was almost charred.
I asked 'em all the tough questions:
Taste? Great
Too dry? No
Done enough? Yes
Any of the skin rubbery? No
Would you eat another piece right now if you could hold it? Yes
Anything negative at all? Maybe, just maybe, a little of the skin was a little too charred.
