Favorite Pizza Topping...roasted marinated tomato

Roasted marinated tomato slices.
My wife marinates fresh tomato slices...she is gone so I cut up a few slices (I used the end pieces that seem to be the last consumed), roasted in the oven at 350 for about 30-35 minutes. There is nothing like concentrating flavor. (I am rediscovering roasting of vegies.)

Anyway the marinated tomato pieces were great on the pizza. Cures the soggy crust issue and give better, richer flavor.
 
She doesn't tell but it had thyme from the garden, I'll have to do some research.

The point is not the marinade but rather the drying process from roasting that concentrates the flavor and does not make for a soggy crust.
 
Ah, but to me the point is the marinade. The goodness of the drying is old hat for me!

Iam gona give then a try saturday night . normaly my favorite toppings are roasted red and yellow bell peppers grilled chicken or shrimp and baby bellas . But iam always open for somthing new and these sound good thanks for posting .

I also have been wanting to try a pizza on the grill Kina like i got on a trip in upstate NY called buffalo hot wings pizza we loved it and never tried to make one yet .
 
Guy, you just gave me an idea...kick 'em up one more notch...dry roast the tomato slices on foil indirect heat on the grill-a little smokiness.

I have some in marinade now...may just have to try it myself.
