Favorite Fattie Recipe

If you saw my earlier thread Im making at least one fattie this weekend. Ive only done them cheese stuffed but Im thinking Im going to make some ABT's and chop them up and then roll them up in a fatty. I cant imagine that could be bad. Any other favorite fatty recipes? Im going to have the room on the smoker.
 
I've got some Venison Sausage (like 20 LBS)..

Venison Sausage (Medium variety spiced like JC Potter)
Chopped Onion
Chopped Jalapeno
Sharp Cheddar Cheese
 
I think my favorite fattie is the roasted red pepper and caramelized onion sausage stuffed with Monterey Jack cheese fattie I do.

 
Good question. My wife and youngest son are coming home this Saturday (Arizona to Iowa trip) and I'm planning to brew 15 gallons and Que some meat this Saturday (Que for their return.) Have a butt and a couple of chickens ready to go
but my son would enjoy a fatty.

Keep the ideas coming. I've done an bacon explosion thing he liked (but myself and wife really didn't care for.) A fatty I think would be good.
 
I was trying to get away from the same old same old pepper and cheese fattie. And a few days before a comp I was reading the rules for a fattie and it said stuffing is allowed. I thought the only stuffing I know is when ya stuff a turkey and this was born. Took 1-lbs. of Jimmie Dean reg. sausage and mixed with 1-lbs. of ground pork,seasoned and rolled flat about 1/2" thick. Dropped in 3 slices of deli turkey, Stove Top savory herb stuffing (cooked), a drizzle of brown gravy (just enough to wet the stuffing)and some whole berry cranberry sauce. Rolled and sealed seam and ends, dry rubbed and smoked for two hours on the WSM. Wrapped in foil for 45 min. sliced and gave it a light coating of bbq sauce and turned in to the judges. Results one 1st place trophy.

We like to do fatties stuffed with cream cheese, pepperoni slices, and some Harry & David pepper and onion relish.
