Fattie cooking recommendations

How long at what temp should I cook the fatties? Saar's Market (unfortunate store name but good bargains) has Farmland pork sausage on sale at $1.49/Pound. Picked up three varieties and looking forward to getting them in the WSM. Thanks in advance for assistance.
 
Hello CH...

I cook my fatties up to 162-165F. The packaging on the product days cook to 160F but I take mine a little longer. It works out great.. and everyone enjoys them. I just cooked up 3 fatties at a BBQ yesterday. 4 Rack's of beef ribs and 3 fatties. Two of the fatties had bacon wrapped around it and the other had a grub rub on it...there was no leftover's!.
That's how I do mine.. takes about 2.5 hrs @ 225-250F for 1lb sausage roll.

I wonder how many alarms have gone off at government surveillance HQ whenever one of us communicates regarding "Smoking Fatties". Now I just know that none of us smokes anything other than meat on our WMS, but I would certainly hope I never get a knock on the door some night by the MIB.
