So the wife decided to surprise me for Father’s Day and get me three racks of BB ribs to cook for dinner.
I was excited because I was really interested in trying Jim Lampe’s HH rib recipe. Not only was this my first time cooking ribs HH but it was my first time period so I was a little intimidated but decided to give it a go. I was sooo excited Dinner actually turned into lunch because I couldn’t wait to get these suckers on the grill lol. I fired up the Genny with the back burner on high and the middle burner on medium I could maintain a temp of 400*.
Since the Genny could only fit two racks comfortably I had to free style the third rack in the oven. For the third rack I set the oven to 400* placed the ribs on a baking rack unwrapped for 30 mins, then wrapped them and cooked them for another hour and 15 mins then let them rest for 10mins. They didn’t have the bark as the grilled ribs but they were just as tender and delicious. I was pleasantly surprised!
I use Salt Lick’s dry rub liberally on all three racks
I tried to put them as close to the front of the grill as possible and at the 30min mark I ended up rotating them so they wouldn’t burn.
After 1 hour I wrapped them in foil with butter and Sweet Baby Ray’s and cooked for another 30mins meat side down.
After 30mins I unwrapped them and cooked them another 15 mins over the flame then rest for 10mins.
All in all they came out surprisingly good for my first attempt just a tad bit salty, I think I might have gone a little heavy on the dry rub but other than that great! Paired these bad boys up with corn on the cobb and sweet potato fries.
