Family Reunion Briskets

On July 10th I'll be at our family reunion and plan on actually smoking 2 briskets at once for the first time. I'd like to know a good accurate time for cooking 2 briskets at around 13-15 lbs each. Now I am one of the guys that doesn't foil my brisket when I cook it so that can be eliminated from the equation. I will be taking my 22-1/2 WSM with me to Frio Country for the reunion.

Thanks Guys

The time per pound in the cooking topics article on this board is pretty accurate, in my experience, but it's just a guideline. Every piece of meat is different and will cook on its own schedule. Barbecue is done when it's done...and before that, it ain't done. Hopefully your briskets finish at about the same time, but exactly what time that is is impossible to predict with any certainty.

The last time I did a brisket that size was on an 18.5 with a 18 pound bone in shoulder with the picnic on it...it took 18 hours at 225 for the Brisket to be tender and juicy. The brisket was on top and didn't hit 175 until the 16 hour mark.
