Enhanced Brisket - Only Option - Will it be OK?

I need some advise. I'm doing a big company BBQ tomorrow, and procrastinated buying the briskets until this evening. All that WalMart had was the large, untrimmed brisket flats with solution added (8%). I know this is not the most desireable, but it was the only option I had, so I bought two of them. I'm putting them on the smoker right now for a 3 PM party tomorrow.

My question is -- how will these turn out? Are they still going to impress, or will they be tough or bad tasting because of the solution added?

They'll be fine, just lay off some of the salt.

I wish they wouldn't do that. </div></BLOCKQUOTE>

Ooops, you got me by a minute lol. That'll teach me to go to break late at work.

Thanks for the advice - I'll let you know how it turns out in another few hours. I've got 2 10-lb brisket flats (untrimmed) and 2 7-lb pork butts that are set to come off in about an hour. You can never have enough meat!!!
