I'm using an electronic probe thermometer by Taylor to gage the internal meat temp. It works great, but I have a tip if you're going to use one: Don't leave it facing the sun or too close to the smoker. Sunday the whole LCD screen turned black and I thought I had burned it out. I couldn't read a darn thing. I put it in the shade away from the smoker and after about 15 mins. It came back to normal. Just thought of passing the tip along.
