Egg Size???

OK, a "generic" recipe calls for 2 eggs. What size? They come in small, medium, large, extra large and jumbo.

I posed this question to my wife, and she said that most recipes refer to "large" eggs. She then added, though, that egg sizes vary from store to store. (I found this hard to believe, but she swears it's true.)

So what's the "skinny" my friends? How much difference does it really make? (Especially when baking.) Any insights?

Yes to large eggs for recipes unless stated otherwise. And yes all large eggs are not large IMO. Not so much stores as in the egg maunfacters/distributors. They varry a great deal.

It makes a difference when baking. Use large.
 
Eggs are "sized" by weight per dozen. Not every individual egg in a dozen is the exact same size or same weight as its carton mates.

What would be the effect of jumbo vs large in, say a loaf of bread of a batch of brownies?

We don't really do anything fancy around this house!
