Cornmeal. Green Onion and Ginger Waffles
1 cup water
1/2 cup cornmeal
1 tsp. salt
1/4 cup milk
1/2 cup all purpose unbleached flour
1/2 cup (1 stick) unsalted butter, melted
3 TB. minced green onion
2 tsp. minced fresh GINGER
2 tsp. oriental sesame oil
1 tsp. baking powder
1 egg yolk
2 egg whites, room temperature
1. Bring water to boil in heavy small saucepan. Stir in cornmeal and salt and boil until thick about 5 minutes. Cool mixture completely.
2. Preheat waffle iron. Blend milk, flour, butter, onion, ginger, oil, baking powder and yolk in processor to paste. Mix in cornmeal. Transfer to large bowl. Beat whites until stiff, but not dry. Gently fold into cornmeal mixture. Spoon into hot waffle iron in batches. Cook until golden brown. Makes 8 to 10 waffles.
