My wife lived in Greece for about six years during her youth. One of the meals she loved most there was this one. Several years back, she and her brother sat down and figured out what to do to make it again. Since then it's been a favorite. We've tweaked things and pretty much use Emeril Lagasse's recipe.

My brother-in-law manages a Domino's and secured these pizza screens for me. I far prefer using them over using skewers. Makes it so much easier to cook the lamb:
One tweak is to caramelize the red onions. The sweetness really helps pull the flavors together:
The finished product: pita, tzatziki sauce, tomatoes, meat and onions, heaven:
