Doug, Going to make my first Pastrami. I was wondering if i could use the foodsaver and vacuum seal it instead of using a zip bag. Your thoughts on this please.

Not sure what effect a vacuum would have on the curing process, but since it seems to work fine in a ziplock bag, I guess I would have to say don't waste a Foodsaver bag to just find out. I also use the same ziplock bag for the two 30-minute fresh water soaks-- not really an option with a cut-open Foodsaver bag.
 
Thanks Doug. I guess what i was wondering if it would speed up the curing time. I'll just go with the zip bag. Thanks Bryan
