Double stacking top grate for jerkey smoking


 
How about HANGING the beef strips (using toothpicks or wood skewers)from the top rack...?
A coworker does this and it works well for him.

Can it be done with pork?
 
Up to now in modern times I have not heard of anyone making pork jerkey. It's usually been beef or deer meat that's used. Originally jerkey originated in the Caribbean where seasoned strips of wild pig/boar meat were hung out to dry in the sun. And then it was called meat that's been jerked.
 
Use 16 inch pizza screens. You can get five or six of them in. I use three strips of wood with slots cut in them to support.

Every-time I go to the local restaurant supply store I always but a 1/2 sheet pan with rack and at least one pizza screen. Can't have too many of either. Screen shouldn't be more then four or five dollars.
