Last cook for a few days as I’m tired of cooking for 18 people total over two nights.
One of my favorite meats to cook, double cut rack of lamb. Kosher salt and black pepper crust. Will sit for 1 hour seasoned before grilling to get that salt to penetrate.
Will sear these on the cast iron sear grate and then go indirect till 130° for pull temp and tent.
Wish me luck, it’s 106° outside. Aaargh.
