Once again, what a great site. Thanks to everyone who answered my posts regarding the 14 lb briskett I was worried about...12 after trimming. Other than getting done earlier than I planned, it just seems too easy. Put it on at 8:30 pm, got temp stabilized, and in bed by 10:30. Other than getting up at 3:30 to flip and baste....my maverick didn't even wake me up. Got up at 8:30 am needed more fuel, opened vents 100% so temp didn't drop starting the new briqs, closed em back down in 1/2 hour. It just went and went. Took meat off at 10:30, put the point back on for 4 1/2 more hours......that was a major treat.... great burnt ends. Anyway, sorry for rambling, but I'm still pkinda new at this...., and just want to let other "newbies" know how great this site is, and worrying just isn't necessary when you have this kind of resource. Thanks again everyone.
