Doin' it for the first time!

Firing the WSM for the 1st time tommorrow /infopop/emoticons/icon_eek.gif

I'll be cooking two chickens butterflied by my friendly butcher. For two butterflied fryers I'm guessing one chimney using the standard method for about 3-4 hours with 2-3 chunks of wood. This sound about right? I'll let you all know how it goes.

I got two butterflied birds going right now.
Since this is my first time too I am just trying
to keep my temp stable at around 250 and this
new WSM of mine is doing just that.I think I
will take them off when they look and feel done.

I hope your chickens turned out ok.

In the future, you might want to open the botton vents a bit to get some higher temps. This would crisp up the skin for you.
