Does it need to be seasoned?


 
I've had my 18.5 kettle for several years but have never smoked on it which i plan on doing this year. I have read about seasoning new grills/smokers but do i need to do it after years of just grilling on it or just go at it after i do a few dry runs to learn my temp control? My kettle will get a good cleaning this year and once i order the thermometer i want, i will begin my new smokin hobby!
 
I never did and saw no ill effects....and if you have been cooking on it this long it is about as seasoned as it will get :)
 
Some people (Harry Soo) say that if the grill was used for hot dogs or fish they can leave behind an aftertaste for future smokes so if you've cooked those maybe it's a consideration.

And if you had it wouldn't make a difference. I've smoked salmon and then chicken and a butt. No problem.
Now maybe if I was competing for 10k I might not take a chance. Only thing I think could be an issue is doing salmon and then immediately cold smoking cheese.
