Does a One Touch get hotter than the 3 baffle versions?

Curious if there is much difference between these two types? I have a new OTS and am refurbing a rescued grill with the three adjustable baffles on the bottom. It seems each 4 hole baffle offers roughly the same opening as one "fin" opening on a One Touch.

Is it best to have all three baffle open on the bottom in identical fashion, or have two closed, one open, or?

Probably shouldn't need to think about this that much, but just kind of curious!
 
Positioning of the vents on the older kettle depends on what you are going to do. Because the vents can be opened or closed independently of the others, you can have overall better fire control.

With the One-Touch, all three vents are operated at the same time. I have found that when trying to cook indirect on my OTG I have trouble keeping the fire going.
 
the control of the older vents is likely better, if only because there's not as much guessing involved.

the air control on the OT system is certainly more than capable of achieving the same control with a WHOLE lot more convenience.

I usually grill with the OT vents wide open.
If i want a super hot fire, i use more fuel.
If i want a medium fire, i use less, or spread it thinner.

Taking the OT system to a bbq/low and slow temp is where the hassle comes in. Keeping a kettle at 225 for 16 hours is a pain.
 
i doubt it as to the temp. both require little tricks. like when cooking/smoking indirect on a ot you need to cover the unused part of the charcoal grate with foil. on the 3 wheeler you just need to shutoff the unneeded vents.

covering unused portion of charcoal grate with foil... I've never done it, not sure of the purpose.
 
this is something i came up with long ago. not necessary on the 3 wheeler. needed on the ot. you cover the unused part during smoking or indirect cooking. the purpose is to prevent cool air from just coming straight up and mixing with the hot air and making a mess of the cooking temps, etc. this way most of the air has to go through the coals and the temp is just that more stable. works for me and have been told it works for others. try it and see.
 
interesting theory!

I've never had a problem without foil, but while doing low and slow on the one touch i've always kept the vents pretty much completely closed.

i'm far from a guru on air-flow, but i can't imagine the cooler air really messing things up - but i probably never paid attention.

or maybe i never had the problem because i've always had a big drip pan there?
