Do I really Need a Thermocouple?

Sorry if this is a simple question, but I'm just a little confused.

Trying to decide if I need a thermocouple or not. I'm looking to purchase a HM for a new smoker I'm building. The smoker is a gravity fed Stump's clone and should never be hotter than say 400F. Typically will be down below 300F.

Does anyone see a reason why I would need a thermocouple?

Advantages: They are more Robust, Cheaper(some are, but some can be much more then probes), Higher heat, mounting options(some have clips, are longer, some bend), water does not effect them.

If you plan on not going to high heats then for the most part TC are not needed. Also, they can be easier to enter a smoker, as you can remove the plug and feed the wires through a small hole, probes you cant remove the plug.

High temperature is 410F for Maverick probes, 572F for Thermoworks probes. The thermoworks probes really start losing resolution around 400F though (2F per 'tick').

I'd say you should be fine with a thermistor pit probe apart from any mounting requirements.
