DIY Mexican-Style Chorizo
1 1/2 TB. vegetable oil
1 TB. ancho chile powder
1 TB. paprika
1 1/2 tsp. ground coriander
1 1/2 tsp. dried oregano
3/4 tsp. salt
1/2 tsp. pepper
1/4 tsp. ground cinnamon
Pinch cayenne pepper
Pinch ground allspice
3 TB. cider vinegar
1 1/2 tsp. sugar
1 garlic clove, minced
8 oz. ground pork
1. Combine oil thru allspice in 12" skillet. Cook over medium heat, stirring constantly, until mixture is bubbling and fragrant. Off heat, carefully stir in next 3 ingredients. Let stand about 5 minutes.
2. Add pork to skillet. Stir together. Return skillet to medium high heat and cook, stirring about 3 minutes.
