Tony C. TVWBB Wizard Feb 8, 2009 #2 i have done wings and roadside chicken on the top grate of the WSM directly over the coals and had both turned out fantastic. a tri would probably do well too, but i have never had the chance to cook a tri-tip in any fashion so i i'm just guessing.
