So, while at Cattle and Cream 2 or 3 mos ago, I came across something I'd not seen. A "Midwest Cut Tri Tip". Looked like any other Tri Tip to me. I snagged it and stashed in the freezer. Decided to throw it on BIg Z yesterday. Ran it at 235 until the Chef IQ probes were reporting 115. Pulled and tented. Cranked the Z up to 450. Slapped the TT back on. Had a nice "bark", sliced like a hit knife through buttah. Good smoke. (sorry went quick and daughter absconded with the leftovers so no evidence)
Simply seasoned BTW Coarse Kosher salt and Coarse BP.
Overall.............darn nice piece of meat
