Did a Tri Tip last night

So, while at Cattle and Cream 2 or 3 mos ago, I came across something I'd not seen. A "Midwest Cut Tri Tip". Looked like any other Tri Tip to me. I snagged it and stashed in the freezer. Decided to throw it on BIg Z yesterday. Ran it at 235 until the Chef IQ probes were reporting 115. Pulled and tented. Cranked the Z up to 450. Slapped the TT back on. Had a nice "bark", sliced like a hit knife through buttah. Good smoke. (sorry went quick and daughter absconded with the leftovers so no evidence) :D Simply seasoned BTW Coarse Kosher salt and Coarse BP.
Overall.............darn nice piece of meat
