I did a huge rack of BB’s (5.24 lbs) hot n fast’ish, 350 - 375 w/ some Hickory yesterday. I actually thought there were 2 racks in the pack when I pulled it out of the freezer.
A 3 lb. or so rack usually takes me about 60 - 75 minutes using this method. I pulled these at the 2 hr mark due to time constraints.
Not the best BB’s I’ve even made but they were still pretty darn good. Served them with smashed baby taters and slaw dressed with homemade KFC clone dressing.
I was pleased to see that the old, Man Law lid thermometer I installed is still reading fairly accurate.
