So, I did a couple nice ribeyes on the Ninja tonight. Sorry I did not get a couple photos. Used "low heat" "grill" setting. Additionally turned on the smoke feature. Cooked amazingly fast, yet gave me great smoke on them, great crust, perfect edge to edge medium. And did I say fast? These were quite thick (around 1.25") and it cooked them so quick it was hard to believe. You'd think it was a microwave :D It's got those heating elements in the fan, and with that going plus it gets the grill plate between 450-475 on low. On medium it'll run at 550 and at high IDK. I can't see any need for that yet. Unless I try some tuna steaks on it. So between contact heat, convection and radiant heat it gets things done quick.
And BTW at Sam's today looky what I saw on sale

Yes, I think it's a good time to be in the market for a Woodfire, just after the Christmas buying season. Thanks for the cooking tips! We've been eating our freezer down lately and my Inventory Manager ("wife") is telling me we are getting low on protein.

So, I also now just realized Amazon sells (I'm sure others do as well) a second version of the unit called the OG850. Same size but only one probe and none of the "connect" features and no cold smoke option https://www.amazon.com/Ninja-OG951-Bluetooth-Technology-Thermometers/dp/B0C9W5CTX1?tag=tvwb-20
Whereas the XL Pro Connect is a bit more $$$ and has those features https://www.amazon.com/Ninja-OG951-Bluetooth-Technology-Thermometers/dp/B0CB1QX1Q2?tag=tvwb-20
The one at Sam's for $399 is the XL Pro Connect OG951 i did verify that at the store yesterday. Amazon also has the Amazon Renewed version of the OG951 for only $299. I've bought Amazon renewed stuff in the past and quite honestly I don't think they were ever taken out of the original box. YMMV https://www.amazon.com/Ninja-Woodfire-Bluetooth-Technology-Thermometers/dp/B0D1H33H9M?tag=tvwb-20
