De-bone a Whole Chicken

For a great description on how to de-bone a whole chicken go to http://www.cutlery.com/debone.shtml . This is a little work but is worth it. Sprinkle rub on inside of chicken before you roll it and tie with cotton twine. Don't worry about the skin getting rolled inside. Smoke for two hours until chicken is 160 degrees.
