What do u cut it from. Butt or Boneless Loin?

Easier? Better? Cheaper? I tried these from the Butt. ( that didn't sound right). It was good. Bacon wrapped. Would loin break down and be like a butt? This was like bacon wrapped pulled pork. This is what I used and cook.



 
In my area CSR's are cut from the butt. Apparently not so everywhere. This leads to confusion on how to cook them. The leaner cut of the loin with less connective tissue calls for different cooking method.
 
CSR's come from the shoulder (butt), also called the 'blade-end loin'. The cut is the same, the only thing different is the name.

At any rate, that's a dang purdy dish, looks delicious.
 
In my experience,if you cook a loin roast to make pulled pork , you get a different consistency to the meat. It is still tasty , but not as soft and juicy as pork butt. At least it seems so to me.
