Bright tomato flavor! Not cooked ketchup! Here we go....This is little more than a FRESH No. 5 Sauce.
*****9.6.08 Major Edit of recipe follows: ****
Crushed Tomato BBQ Sauce
2 t olive oil
1/2 c chopped onion
2 cloves garlic
Meat flavor: bacon, ham or, bbq
1 14 oz. cans crushed tomatoes
2/3 c vinegar
1/4 c dried cranberries
2 T worchestershire sauce
2 T Rub
1/2 c brown sugar
1/2 lime juice
Saute onion and garlic in olive oil (brown bacon if using).
In a blender turn crushed tomatoes into smoothie texture.
Remove onion and garlic from pot.
Pour tomato mixture into oil (add meat if not using bacon).
Pour vinegar into blender and add dried cranberries, cooked onion and garlic.
Blend til smooth (It would probably expedite things if berries had soaked in the vinegar).
Next, add the onion blend into the tomatoes. Add worch., rub and, brown sugar.
Simmer for 20 minutes.
Finally, remove from heat and, add the juice of 1/2 lemon (or lime).
Much fresher tasting than ketchup based sauce. Enjoy.
