Creekstone Prime Beef Ribs

These were really good. Not the best meal ever, but really good. I ran out of time and took them off probably about 30 mins early. Overall great cook on the WSM. I used Kosmos texas beef rub and wrapped at about 160IT in butcher paper.

@Andy.Craig I had a similar experience last Father's Day when I went a bit too long on cooking Creekstone beef ribs. A bit too dry as I waited too long before wrapping them in pink paper. I also spent a lot of time trimming the fat before the cook. You did a nice job trimming in the second pic above.
