Creamy Smoked Garlic Dressing

Oh, fellow GARLIC LOVERS!!!!!! Found this while working on my vinegar binders.

Creamy Smoked Garlic Dressing

1 head smoked garlic or roasted garlic
1 cup mayonnaise
1 cup sour cream
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1/4 cup apple cider vinegar
2 TB. Dijon mustard
1 TB. lemon juice
1 TB. Worcestershire sauce
Salt and pepper to taste

1. Peel the garlic cloves and mash until smooth.
2. In a large bowl, whisk together the garlic and rest of ingredients.
3. Transfer to a sealed container and refrigerate until needed. Will keep up to 1 week. Makes about 3 cups

I love what he says about this recipe - "Lots of smoked garlic makes this a great dressing for potato and pasta salads. You can never have enough garlic
in a dressing"
 
We are suppose to have Smashburgers tomorrow night and can't decide what to have with them. Potato or pasta salad? :unsure:
 
Creamy garlic dressing is a staple in Greek "family style" diners in Chicago.
This sounds just like it, except the smoked part.
