Oops! Here is our New Years Eve meal. Stuffed Pork Loin with Port Reduction Sauce.
I used a whole pork loin cut it half so it would fit on the Weber. Then it was roll cut to open it up for the stuffing. Next I tossed some dried cranberries in with some port in a sauce pan and heated that. After it had steeped for a while I removed the cranberries as they need to go into the stuffing. Nothing real fancy here, just a plain bread stuffing. I then proceeded to truss the loins and season with just salt and pepper. While they were cooking on the grill I finished the port deduction with some chicken stock, thyme, and shallot.
It must have sucked as we only ate one of the loins. (8 people)
