I like cooking the C.S Pork Ribs and cook them often.
Yesterday my wife brought home some C.S. Beef Ribs that were on sale at the local grocery store, I was puzzled, never seeing them before. They cooked up perfectly in three hours with apple smokewood, a good amount of BRITU, and went well with a Rasberry BBQ sauce on the side. They really took the smoke well.
The lable read "Prime Angus C.S. Ribs". What cut are these? They are my new favorite, as tender as a good filet.
