Hi all hope everyone is having a great Memorial Day weekend. I need a little help on this please. I am doing 3 nice racks of spares tomorrow I have them all trimmed, rub and in the fridge. I was also going to do a Boston Butt but a couple of folks coming over would like some country style ribs. I want to cut the butt into country style ribs but not really sure the best way to do it do you cut the butt in half long ways and then cut the ribs from each half? The butt weight 8 lbs so that should me more than enough ribs. I imagine about 1 1/2 to 2 hours will be the cooking time.

I'm not sure how you would accomplish this without a powered meat saw, but I will say that country-style "ribs" are cut, for the most part, so that the grain of the meat is perpendicular to the length of the "rib".
