That grain kinda reminds me of the Angus Tri Tips my Wegman's sells. Looks like to steaks/roasts in that pack? I'd probably treat it like a TT and go low-n-slow with a hot sear at the end.
I used to buy coulottes at least once a week many years ago. I treated mine just like a steak and grilled them over high heat to medium. They used to be dirt cheap, but then again so did a lot of things. Man I feel old.
