I want to smoke a bunch of CGH(8) for me and my sister-in-law. Couldn't find anything when I did
a search here. I want to brine and smoke them like a turkey. Any ideas as far as time/temp?
 
Hi Jim,
As an experiment, I thought I'd do 4 on "thrones"
and 4 laying down normally,all whole. At 240-250
temp at the dome it shouldn't take more than about3-1/2-4 hrs to get them to 165 at thr breast?

Did you every cook these pidgeons /infopop/emoticons/icon_wink.gif butterflied? And, if you did, do you like them better that way or whole?
Also, I wonder if they would benefit from a little higher temp than was Pat was suggesting? I thinking about 250? at the grate, which would put the dome temp at around 280-300?. Seems like these little guys are somewhat leaner than chickens. What are your experiences?
