Cooking ideas alongside Fatties?

So I'm about to throw my first fatties on the smoker, and am brainstorming ideas on what to cook with it.

I'd like to find something that can cook at the same temp (~250 or so it seems from searching), and for roughly about the same time (+ or - an hr or so is fine too).

I may do ABT's, from reading salmon needs lower temp or takes a bit longer than I'm going for.

Any other ideas? I read somewhere that bologna may be neat to try. I'm not looking for anything too heavy.
 
Some boneless turkey breasts would be good. You could fill up some space and smoke some garlic heads. Ham, the options are endless...
 
Well - this is what I ended up with.

10 ABT's - 1/2 stuffed with cream cheese & pulled pork, the other 1/2 with white cheddar & pulled pork.
2 Fatties - Jimmy Dean Regular & Italian
1 lb German Bologna

Also for bonus, a pork butt I did a couple weeks ago.

She looks might fine, but unfortunately I foiled her after this photo and all that delicious bark turned soggy. Won't make that mistake again! Luckily I took a taste test of the bark at this stage and ooooooh was it great.

I bet it all tasted better then it looks. Bacon wrapped fatties! How long did you let the 'mators cook? I've always wanted to smoke some bologona... very cool pic, definately a keeper. I think it'll be my wallpaper for awhile
