Complete Smoker Newbie from Southern Ontario

Hi Everyone,

I just purchased an 18.5" WSM and have NEVER had any experience with smoking. I've peaked into some threads and feel quite intimidated.

What other equipment do I:

a) definitely need
b) should get as a need toy/improvement?
 
The "Weber Smoke" book is a good place to start with some easy recipes. Some grilling gloves and some kind of temperature measuring device are essential. I use a HeaterMeter to monitor/control the temperature of the pit as well as monitor the internal meat temperature. As a beginner, you could use any Maverick/Ivation type thermometer. To simplify igniting your charcoal, you might want to take a look at the Weber Chimney starter.

Welcome Judd. I think Jas has covered the essentials. Charcoal chimney is a must and a good meat thermometer. Cook easy stuff like chicken. Put a whole chicken on that WSM and fall in love. Pork butt is great too and very forgiving. It's not hard , honestly. You just have to get used to the smoker and how it runs.

Welcome Judd! Don't be intimidated, the beauty of the WSM is it's eaze of operation. Maybe start with some baby backs and a meatloaf is always a hit, you won't believe how good it tastes coming out of a Smoky Mountain!
 
Welcome Judd! Lots of good advice is available in this forum. Gloves, thermometer, and chimney starter are definite must haves in my book- as well as a good smoker book- I like to reference my copy of Webers "Smoke" cookbook. One thing I haven't seen mentioned is some form of wheels for your smoker to make moving it around easier. I just use a simple wheeled planter dolly with a rope I've attached to move mine around with. It's simple and works great. You'll want to be able to move it around easily if for no other reason than to get it out of the wind if possible when using your WSM. You'll find wind bothers smokers more than cold.
