Competition ribs at home

Yesterday, I smoked a rack of Baby Back Ribs, competition style. While I haven’t competed in years, once I became KCBS Contest Rep., my home cooking was much more simple than making competition style chicken, ribs, pork or brisket. Now that I’m retired and an empty nester, I have a little more time when I cook outdoors. Making ribs competition style takes only a little more time and a few more ingredients, so I’ll keep doing that now (at least for ribs!). For you CBJ’s, I gave myself an 8, 8, 9. The texture was perfect-one bite came away cleanly from the bone, leaving the bite area and bone clean. Next time, I’ll buy better quality ribs, but these were meaty.
