Comercial Rub and Amount of Meat

Queston.
I am cooking for my office party on Friday this week and I was wondering what Rub you guys would suggest for a Brisket.

Also I need 20lbs cooked pork butt and 10 lbs cooked brisket.
How many lbs raw or how many of each should I purchase.

Rick,
Theres tons of rubs on the market that are very good. Ones that should be easy for you to get on such a short notice and are usually available at your local Supermarkets are Stubbs, Paul Prudhomes BBQ Magic, Butt Rub and Tony Cachere's Creole Seasoning. All of these rubs/seasonings are pretty good and can be tweaked to your liking by adding an ingredient or two.

When you have more time to order on-line there are many many very good ones to choose from. Here's a list below.

For the brisket, get either two approx. 12lb packers or three approx. 5-7lb flats. That should give you approx. 10lbs of finished meat.

For the butts get 2 twin packs from one of the wholesale stores. They average between 12-16lbs per pack. That should give you approx. 20lbs of finished meat.

Rick, if you can, get some Wolfe Rub Bold for the brisket. I tried it for the first time in a comp and got a 6th place call. Its good stuff. I can't wait till next year to try it in more comps. Most of the people I served brisket with Wolfe Rub Bold on it liked it and they told me that it complimented the meat well. It didn't over power the meat like a lot of rubs do.

Rick to be safe I'd say so, there's alot of waste from fat in most packers.
