Cold Butt Cook

19* out and I'm cooking a couple butts to fill an order for pulled pork. Loaded the WSM up with KF and Hickory chunks and firebricks in the water pan which I've been using for the turkey cooks and they work fantastic. I've included a pic if anyone is interested. Just put a piece of foil over it like you would sand.

Seems like it will work like the terra cotta flower pot base..which is a long time.

In for the long haul........5:50pm and we just hit the plateau @ 165*.....
