Cleaning and the Funk

I did it. I left the partially full water pan in my WSM to enjoy about 2 weeks of this wonderful (mold inducing) Georgia heat. There is no visible growth, but a funk that reminds me of toe jam. (Please don't ask how I know what that smells like).

Not concerned about the water pan, but can I just fire up the smoker without the pan and cook this stuff out or do I need to clean the insides with an oven cleaner?

I seem to recall this being asked before and the answer was to dry heat cook it out, but wanted to make sure.

If you answer, I promise not to let this happen again and I will post a 1000 word essay on the responsible ownership of a WSM.

O my, you haven't used your WSM in 2 weeks?

It is manditory of TVWB members to use once a week at a minimum.

I would burn a full lit chimney through it with a full pan of hot water and when the temp falls add some dish detergent to the water and scrub a dub when cool enough but still warm/hot to remove the pan and clean. Good luck and don't let this happen again! This is your official pink slip!

Thanks Glenn. I apologize to you and all other members. So, you think I need to scrub the insides with detergent? It is not burning a dry burn at full temp with no water pan. (Cleaned that already). Will that do or not?

Again, I am sorry for my infraction. I am humbled and truly remorseful!

Thanks, my friend. Again, I truly apologize to you and all members for my behavior. Gosh, I am ashamed.

Kidding.

I am going to let this "cook" hot and dry all night long. That should kill whatever is there and smoke out the remainders. Tomorrow, I will be starting up a Pork Shoulder and working up a new sauce. Will let you cats know how it turns out. Ketchup with some sugar and a little bit of black pepper. My rub is pretty spicy, so I am thinking the sweetness will cool down and help. Hope springs eternal.

We need a yard like Westpoint has ! Anyone that doesn't cook on there WSM for 2 weeks should have to walk punishment for atleast 12 hrs a day for a week .

If it happens again then they outta have to come clean everyones WSM .

All kidding aside a good wash of the water pan and a hot burn in the cooker itsself wide open should fix it right up IMO ymmv

I went to the Citadel (my dad went to West Point), so I am quite familiar with walking tours! I have to work a bit this AM, then coming home to smoke that pork.

Take it easy, guys and I'll let you know how the new sauce comes out.
