Clay saucer solved all my problems

Have had issues with wind, having to add charcoal, etc. First cook today (windy again) with a clay saucer in the water pan and she's holding steady at 225 with the vents closed. Now let's hope these veal ribs turn out OK. I'll never use water again.
 
I'm with you Michael. I switched to waterless with clay saucer a few months ago and haven't looked back. Saves on fuel too.
 
Using a windbreak will make your life easier as well. It doesn't have to be fancy. Mine is 3 sheets of plywood fastened together with hinges.

So true Jerry. Mine's just an old card table that folds into three pieces. Perfect.
