Hey everyone,
I wrote in a couple of weeks ago about some issues I was having with the clay pot. I couldnt' get the temps stabilized for some reason. Thanks to your advice I smoked up a pork butt the other day and did not have to adjust the vents for 8+ hours. The only adjustment was made when the sun went down and stopped shining on the WSM. The temps dipped a bit rather quickly, but a slight adjust and I was rolling at 240 again.
To anyone using the clay pot mod, i suggest getting up to 235 and shutting all down except one vent to about 15%. You'll be sleeping like a baby all night. Thanks all!!!
