CI seared pork loin with rustic tomato sauce

Costco had $5 off pork loin so I bought the smallest one the had.

Was able to apportion 5 meals including this cook.

Sliced and dressed with evoo, SPG, Italian seasoning and thyme.

Set the CI to a low sear, 5 on the dial, and quickly put a little color on each side and then to a wire rack in a 200°F oven to finish as I made spaghetti and the sauce.

Very flavorful meal for a very low effort and simple cook.

I pick up one of those every time they do the $5 off at the register, too! A roast, some chops, and some Canadian Bacon if I feel like putting in the work. :) That's a really tasty looking, comforting plate of pasta, Brett!
