Chunks vs Chips?


 
It depends on how I'm cooking. For smoking I use chunks. They are great for long term smoking.

For grilling I use chips. Depending on how I want to use them I'll soak chips in water, drain and put them in a foil packet. Sometimes, but not often I'll put damp chips on hot coals.
 
Also alot can depned on the type smoker you have. Electric I used to put a tin pie plate right on the coil I used chips as chunks never created the flavor I was looking for. Now with my gasser I actually use a sawdust type of 5 different woods blended. I have also cheated and went to a local lumber mill. They have certain saws set up strictly for hard wood. Took a big ol garbage bag of that home Works rather well and couldn't beat the price. lol
