I started with a full chamber of charcoal chunks+regular briqutes. Temp rose quickly to 275, with bottom vents 75% closed, stayed that way all morning. Finally had to close 95%, still hanging around 275. I have a 8lb pork shoulder. I think I used too much fuel to start with, should of used 3/4 chamber instead of full. I learn from my mistakes.Smell good. thanks terp
