I bought a 20 pound chuck roll for some pulled beef and was wondering if I could cut it in half to cook faster. At 1.5 hours per pound a 20 pounder will take forever.
Yes, it will cook faster when cut. I'm cooking one in a few weeks, and, from what I've read so far, I'm guessing 1 hour/lb. if I foil at stall (around 160-165).
