Christmas Butt and Windy Weather

Greetings all and Merry Christmas.

It’s currently 58 degrees and the Santa Anna winds are blowing through southern California with gusts up to 35+ miles per hour. I have a 6 pound pork butt in the smoker and the temp seems to be holding at a solid 250. I’m also, trying the waterless method using a 14” clay saucer in the water pan, I’ll keep you all posted and wish me luck with the gale force winds.
 
Sounds like you are doing pretty well Toby. 35 mph winds and hold temp. You should only need to worry about a wind break. The air temps are no probem. You keeping the WSM out of the wind? Sounds like the only concern would be the wind blowing over the WSM and burning the fuel a little faster :-)

You will be glad to know the smoke was a success even with the weather. I never needed to add any more charcoal and the butt turned out great, my boy loved it. I forgot to take pics yet again but I promise I will on my next smoke.
