Chris Lilly: Dip cooked ribs in vinegar/water?

Chris Lilly's Big Bob Gibson BBQ Book has a recipe on page 186 for Memphis dry ribs.

He rubs them, then smokes them about 4 hours at 250. Then, at the end, he mixes a cup of white vinegar with a cup of water in a shallow baking pan.

"Remove the ribs from the grill and dip them in the vinegar water." Then put on cutting board, season with a heavy coat of more dry rub, slice, and serve.

Have any of you ever tried this or eaten ribs dipped this way post-smoking?
 
I do it every time I cook ribs. I prefer mine without BBQ sauce. They're great. I've even converted a few people to "dry" ribs. Give it a shot!
 
Larry, do you really dip your fully cooked ribs in vinegar-water before the final sprinkle of rub?

That is the part that got my attention.

How do they taste?
 
I sure do and they're great! You can actually taste the rub you're using vs sauce. I swear by his method.
